HEALTHY BANANA BAKED GOODS

I always have bananas over ripening in our pantry, which is like, the best because then I get to make some goodies with them. I have made certain recipes over and over and over again but I have also found some new ones that have been great too!

I love finding ways to make baked goods healthy, and these are some of my favorites! So if you are self isolating and have some bananas that beginning to brown, check out all of these recipes!

KITCHEN SINK BREAKFAST COOKIES

makes 6 large cookies or 12 small

3 over ripes bananas

1 egg

1/2 tsp vanilla extract

1/2 cup oats

1/2 cup flour

2 scoops protein powder

3/4 tsp baking soda

1 -2 tsp ground cinnamon

1/4 ground flaxseed

1/2 cup pumpkin seeds

1/3 cup dried cranberries

Combine all of the ingredients and bake at 375 degrees for about 13-15 minutes


BANANA OAT BREAKFAST CUPS

disclaimer: these are MY FAVORITE THINGS EVER!! I adapted them from the original to be more suitable for breakfast

makes about 12 cups

2 1/2 cups old fashioned oats

2 tbsp ground flaxseed meal

1/2 tsp salt

1/3 cup honey

2 tbsp fresh ground peanut butter

1/4 cup coconut oil

1 ripen banana

2 tsp vanilla extract

1 cup raisins

*for serving: yogurt of choice and berries for topping

In a large bowl combine the oats, flax and salt. Separately in a medium bowl combine the honey and peanut butter, mix well then add the melted coconut oil and mashed banana and vanilla. Mix the wet mixture into the dry mixture until completely combined and all the oats are mixed in.

Cover and place in the fridge to cool for 15-20 minutes

Preheat the oven to 350 degrees

Oil the muffin pan well. Remove the oat mixture from the fridge and divide it among the 12 muffin spots. Wet your fingers, then press the dough along the bottom and edges of the muffin pan to shape the mixture into “cups”. If the dough sticks to your hands while shaping, re-wet them and continue, repeat as needed.

Bake the cups for 10 – 15 minutes or until they are lightly golden on top. Let cool for 5 minutes then run a knife around the edges of each cup carefully to lift them out.

Either eat warm, SO GOOD, or let cool and store for the morning. I love putting some vanilla yogurt and berries in the bowl for a personal little parfait.

BANANA BARS

makes 12 bars

3 medium extra brown bananas

2 eggs

1/3 cup brown sugar

1/3 cup coconut oil, warmed

3 T almond milk

1 tsp vanilla extract

1 1/4 cup almond flour

1 cup all purpose flour

2 T flax meal

1 1/2 tsp baking powder

1 tsp cinnamon pinch of salt

1/2 cup chocolate chips

Preheat oven to 350 degrees and prep a 9×13 pan with parchment paper or cooking spray. Mash the bananas and mix with the rest of the wet ingredients. Add both flours and the rest of the dry ingredients except the chocolate chips. Don’t overmix but combine until just about completely mixed, then add the chocolate chips and give it one or two more turns until completely mixed.

Bake for about 30 minutes. Remove and let cool for about 5 minutes before cutting into 12 bars.
